Howe's Famous Peanut Brittle Recipe
1 cup light corn syrup
1 tablespoon butter
1 cup sugar
3/4 teaspoon salt
1 cup raw peanuts
1 teaspoon baking soda
Combine corn syrup, butter, sugar and salt and cook over medium heat until sugar dissolves. Add raw peanuts. Increase heat to high and stir constantly until peanuts become light brown. Remove from heat. Quickly stir in baking soda. Spread thinly on greased shallow pan. Let stand until cold and hard.

My husband needs to avoid salt and oil and he loves his peanuts. I dump the peanuts onto a cookied sheet and bake in the oven at 325 until they are the color we prefer. I cool them on wax paper and put into an air tight container. My grandchildren love them and so do we. No salt, no oil.
